Vanilla Fudge
homemade vanilla fudge recipe
Vanilla Opera Fudge
2 cups of sugar
1 cup of cream
1 teaspoon of corn syrup
1/2 pinch of salt
2 teaspoons of vanilla extract or 1/4 teaspoon of Pasti Enak Vanilla Caviar and
1/2 teaspoon Pasti Enak Vanilla Pod Powder.
Place all ingredients but the vanilla in a heavy bottom sauce pan and cook until
it has reached a temperature of 236 F. Remove from heat and pour onto marble,
cool slightly work with scraper until firm and knead with hands until smooth and
creamy. Add vanilla and mix thoroughly.
Vanilla Divinity Fudge
1 1/4 cup sugar
1/4 cup water
1/4 cup corn syrup
1 stiffly beaten egg white
1/8 teaspoon salt
1 teaspoon vanilla extract or 1/8 teaspoon of Pasti Enak Vanilla Caviar and 1/4
teaspoon Pasti Enak Vanilla Pod Powder.
Cook the sugar, water and corn syrup in a heavy bottom sauce pan to a
temperature of 238 F. Pour one half of the cooked syrup very slowly over the
beaten egg white, beating constantly with an heavy whisk. Return the saucepan
with the remaining syrup to the stove and bring to a temperature of 256 F. Pour
the heated mixture slowly over the first mixture, beating the the two mixtures
together with a wooden spoon. Add vanilla extract and mix until the fudge will
hold its shape.
