How to make vanilla extract?
The most common method for making vanilla extract in the home is by soaking
split vanilla pods in alcohol. The process is quite simple. Take 2-8 vanilla
pods and split them down the middle (length wise) with a knife. Take a bottle of
alcohol, it is best to use an alcohol without a strong flavor, and place the
split pods into the bottle. It may be necessary to drink some of the alcohol
first so that the pods will fit into the bottle. We use high quality vodka to
make our vanilla extract as we feel it gives the best results. Place the top on
the bottle and let it sit on a shelf for 1-2 months.
For an extract with higher concentrations (essential oil) follow the
instructions listed above use 15 or more vanilla pods and let the bottle sit for
1-4 weeks. Then empty the contents of the bottle onto a smooth tray. Remove the
vanilla pods and let the alcohol evaporate. Depending on the air circulation and
the size of your tray the alcohol will evaporate in 6-48 hours. The dark
residual oil will be vanilla essential oil.
Vanilla Vodka can be made in the same manner as the first recipe for vanilla
extract. If you would like a sweet alcohol / aperitif add 1 cup of rock sugar to
the bottle when you add the vanilla pods.
